“It doesn’t need to be complicated to be effective,” shares Jake, co-founder of Tomorrow’s Bread. As Jake sees it, the production infrastructure and community network already exists within the Colorado bakery scene, so it’s really a matter of connecting the dots and educating bakeries in other communities on why this work is valuable. The Satellite Bakery Program is designed to be a “disarmingly simple” way to meet food security and health equity needs in Colorado’s rural communities. So far, CGC members Little Red Hen Bakery in Chaffee County and Pueblo Seed & Food Company in Montezuma County, are already committed Satellite Bakeries.

Grant helps expand market opportunities for organic grains
The Colorado Grain Chain (CGC), a nonprofit organization that grows and connects a vibrant community-centered grain economy in the state, has announced recipients for the 2024 Colorado Organic Grains Microgrant Program. CGC awarded six grants, at $5,000 each, to businesses in the middle phase of the organic grain supply chain, which falls after harvest and before retail. This round of grants is the first of a three year Microgrant program.

The idea of connecting farms to schools resonated with me as both a fledging grain nerd and as someone who has spent time in a classroom as a teacher. We had hosted several school chefs at our mill in Boulder, and through a series of conversations, I was connected to Deb Yirku, the head chef for the Calhan School District. Given the nature of their agricultural community and the fact that the school had a scratch kitchen, Calhan emerged as a logical place to launch our own 'mini pilot' with Dry Storage flour.

“Nixtamalization, like other indigenous knowledge, is rooted in our culture, and it’s very important for me to help keep this tradition alive by using it to make masa the traditional way, but also teaching others about it,” says Julian. As a pastry chef, who was eager to switch the main ingredient in my baked goods for a local, more sustainable option, not finding local sources was a massive obstacle. Since then, flour made from locally grown grains, including rye and many other wheat varieties, have fortunately become more available from local millers and bakers.
