This course and focuses on heritage grain basics, crop science and improvement, history and culture, soil health, climate change, production, processing, infrastructure, quality, economics, the role of whole grains and culinary applications in nutrition, health, disease and sports performance, community related aspects of the grain value chain and cooperatives, grain sovereignty and justice, and artisan baking and cooking.
