Wood’s High Mountain Distillery blends modern craft with deep-rooted history, operating from a 100-year-old building in Historic Downtown Salida and distilling with “Ashley,” an original 1880s German pot still—one of the oldest stills in use today. Their spirits are a true reflection of Colorado’s San Luis Valley, where they source nearly all their grains and potatoes (except for cherrywood smoked malt—but they’re working on it). At 7,600 feet, the Valley’s dry climate and short summers produce barley, wheat, rye, and potatoes that thrive in the high-altitude terroir, lending distinct character to every batch. With carefully curated grain blends—including malted rye and specialty barley malts—alongside contemporary gin recipes and high-altitude maturation, Wood’s creates bold, complex spirits that embody both tradition and innovation.
