WeldWerks Brewing, located in Greeley, Colorado, and Cohesion Brewing, located in Denver, teamed up to brew a collaborative beer and share inspiration for their CGC Microgrant project. Both breweries are located in the South Platte River watershed. In July 2023 and again in October, they brewed a Světlé Silné Pivo or a Czech style pale strong beer which they named Foamies. The breweries worked with Troubadour Maltings from Fort Collins to use Super Pevec malt as the main grain of this beer’s grist. Super Pevec was created by Troubadour specifically for Cohesion as a custom malt that they utilize frequently. It was designed to mimic the Czech lager flavors and aromas that Cohesion admires and is malted from locally sourced, Colorado grown Genie barley.


Super Pevec from Troubadour Maltings

Super Pevec is a custom base malt developed by the dynamos at Troubadour Maltings for many of Cohesion's Czech style lagers. They engage in a light stewing of the barley in the early stages of kilning. This process begins the conversion of sugars in the malt to boost the impact of decoction brewing and add body during brewing. The goal is to mimic characteristics produced from floor malting and undermodified malts.

This malt is created with the LCS Genie 2-row malting barley variety. Troubadour Maltings was the first maltster in the US to contract and produce this variety. The variety was originally bred in the UK for distilling purposes. Visionary and former North American COO of LimaGrain, Frank Curtis, saw Genie 2-row's potential as a malting barley for craft beer in the growing conditions of the Mountain West. It has a short profile with good stalk strength and yields well in dryland production. It's proven to be an excellent producer in CO in particular.

The specific batch of Super Pevec for this Microgrant collaboration was malted with Genie barley from the 2021 Walker Farming crop. Greg Walker farms acreage within a few miles of the Troubadour Malting facility. In 2021, they had fields right near Hwy 14 and County Road 3. At Walker Farming they plant barley after beets as part of a 3 crop rotation (corn, beets, and barley). Chris Schooley of Troubadour says that the 2021 barley was a "dream to malt!" He goes on to explain that it drank up the steep water and jumped right into a very robust germination. It achieved a full modification between 72-87 hrs. The lower proteins kept the Super Pevec color down just over 2 degree Lovibond, which can be a challenge with this malt style.

Troubadour also made a custom MODULATED malt for this brew which is their unique take on the cara/crystal style malts. This particular one was named MOD Svitani and adds a touch more of a deeper golden hue. This was also produced with 2021 LCS Genie barley.
