While their hearts stay in Italy. Emilia combines the culinary-hospitality-stewardship found only at Olivia, with the time-honored recipes and flavors found only in Emilia-Romagna. Until now.

The Dear Emilia menu features local flours from Dry Storage, Haxtun Heritage Mills, Bow and Arrow, and a variety of other local products, from Ela Family Farms pear butter to beef from Grama Grass Livestock, local greens and mushrooms.
