Tetiana Sherman is a chef, culinary educator, and the owner of Culinary Discovery LLC in Northern Colorado. She enjoys collaborating with local farmers, producers, and breweries to feature local products in her recipes and increase grain literacy. Tetiana serves as a last-mile educator for Colorado’s grain system.
Born and raised in Kyiv, Ukraine, she ran a small culinary school there teaching adults and children foundational cooking skills, with a special focus on sourdough bread. She partnered with Ukrainian farmers to test their flours and share feedback on how they performed in bread and other recipes — introducing their grains to her students while building practical expertise in how grain variety and flour quality affect baking performance.
Tetiana brought her knowledge, experience, and passion for culinary education to Colorado, where she founded Culinary Discovery LLC to teach practical, hands-on cooking and baking classes for adults and children. Her refugee story was featured on Colorado Public Radio, PBS12, Voice of America, and in the Fort Collins Coloradoan.
Today, Tetiana teaches culinary classes through OLLI at Colorado State University, presents on Ukrainian cuisine and traditions for community organizations, and collaborates with Poudre Libraries, Arapahoe Libraries, and other educational partners. Her program Bread: The Soul of Ukraine explores the history of grain, bread, and sourdough traditions in Ukrainian culture.
After adapting her recipes and teaching methods to Colorado’s climate, altitude, and available flours, Tetiana is now applying that same systematic, hands-on approach to Colorado-grown wheat.
This is the goal of her Colorado Wheat Project: studying Colorado grain varieties, testing how they perform in baking and cooking, and translating those findings into practical information for students and consumers.
